Watermelon and Yellow Tomato Salad


1 (4-pound) watermelon, preferably seedless, rind removed, cubed into 1-inch pieces
2 pounds yellow pear tomatoes, halved
1 lime, zested and juiced to 1 tablesppon
2 tablespoons chopped fresh mint leaves
1 cup feta cheese - cubed
2 tablespoons light rum, or to taste


Directions:

Into a bowl, put the cubed watermelon, pear tomatoes, lime zest, 1 tablespoon lime juice, mint, feta cheese and rum; toss to combine. Chill salad for 15 minutes and serve.
