We used to teach Thai cooking classes that always sold out but also took hours and hours to prep and teach. We almost asked our students to come back the next night due to the complexity of the class content and that was a real turn-off. Don't get me wrong - the classes were fun and delicious, but the result was that most students felt that they couldn't go home to create the recipes and that was disappointing. So, the task at hand was how to create a group of recipes that would be fun and easy to prepare, yet still authentic enough to appeal to even the most discriminating of palates. Hence, Thai Cooking for Dummies was born! Thai Red Curry Mahi-Mahi Salad is an easy first course for us all to enjoy while we begin our preparation for Calamari and Mussels in Thai Curry Sauce. Thai Chicken with Carrot Ginger Salad is a perfect pairing with the Calamari and Mussels. Coincidentally, it also is perfect with our Thai Prok Lettuce Wraps. The only thing missing on the menu is dessert. Not to worry old food friends of mine! Rania to the rescue with something scrumptious and delicious tossed in a very special end of class treat!
