I must tell you that I came up with the name for this class long before I came up with the recipes. That was the easy part. The hard part was deciding on what to make as I had a BILLION ideas and had to pair the list down to four recipes! Forget four recipes! Tonight, I'm teaching FIVE new recipes and each one is a winner. Smoked Tuna Spread with Flat Crackers as an absolute must on the menu only because it is the most perfect accompaniment to our aperitif of Prosecco with Aperol. Moving along, Grilled Sea Scallops on Tortilla Chips with Avocado Puree was an easy breezy decision when it came to our second recipe, just because it's absolutely sensational. I took a poll on round three and the majority ruled when it came to my recipe for Hearts of Palm with Stone Crab Salad with Avocado Buttermilk Dressing. Grilled Salmon with Pomegranate Balsamic Syrup was a no brainer but the decision between that and Grilled Shrimp Tacos was what threw me for a loop. I couldn't decide between the two recipes and that's what catapulted this class to five recipes instead of the usual four. I just can't wait to see which recipe gets your vote.
