Freshly ground black pepper to taste

1 baguette of French Bread – sliced into 1/4- inch slices
Olive oil
1 medium Vidalia onion - chopped
1 large clove garlic – chopped
1 quart jar purchased good quality Tomato Basil Sauce
1 quart chicken stock
1 cup heavy cream – warmed
Freshly ground black pepper to taste
For Crostini:
1 baguette of French Bread – sliced into 1/4- inch slices
Olive oil
Directions:
In a heavy sauce pot, melt the butter and add in the onion. Sauté until almost caramelized and then add in the chopped garlic. Add in the jar of the Tomato Basil Sauce and the quart of chicken stock. Bring to a boil and simmer the mixture for about 10 – 15 minutes on medium low heat or until the mixture begins to thicken slightly.
Add in the warmed heavy cream and gently reheat the bisque. Season to taste with freshly ground black pepper. Serve with crostini with a tossed salad for an easy week day dinner.
For Crostini:
Heat oven to 375 degrees
Brush baguette slices with olive oil and place on a parchment lined baking sheet. Bake the crostini until golden brown – turning once. Remove from oven and cool on baking rack. Store in a cool place. I store my crostini in a white paper bag in an effort to keep them crisp.
