Greek Potato Salad
Serves: 6
Ingredients:
12 large red potatoes, unpeeled
½ cup chopped green onion
¼ cup fresh chopped parsley
¼ cup chopped dill
2 tablespoons capers
Dijon Vinaigrette:
½ cup extra-virgin olive oil
¼ cup red wine vinegar (or more to taste)
2 teaspoons lemon juice (or more to taste)
1 tablespoon Dijon mustard
2 large cloves garlic ~ minced
½ teaspoon Greek oregano (or more to taste)
Sea salt and freshly ground black pepper to taste
½ cup chopped green onion
¼ cup fresh chopped parsley
¼ cup chopped dill
2 tablespoons capers
Dijon Vinaigrette:
½ cup extra-virgin olive oil
¼ cup red wine vinegar (or more to taste)
2 teaspoons lemon juice (or more to taste)
1 tablespoon Dijon mustard
2 large cloves garlic ~ minced
½ teaspoon Greek oregano (or more to taste)
Sea salt and freshly ground black pepper to taste
Directions:
Place red potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 25 minutes. Drain and chill until cold, about 30 minutes.
Slice potatoes and place into a large salad bowl; toss potatoes with green onion, parsley, dill and capers.
Dijon Vinaigrette:
Whisk olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt and pepper to taste in a bowl. Pour the dressing over the potatoes and toss. Serve immediately or chill until serving time.
