Brown Rice Milanese

Ingredients:
2 tablespoons butter
2 shallots, chopped
1 garlic clove, minced
3 tablespoons dried chives
1/2 teaspoon dried dill
1-cup short-grain brown rice
2 cups cold water
1 cup freshly grated Romano cheese

Directions:
Melt butter in large skillet or shallow heatproof casserole over medium heat. Add shallot and garlic and sauté until tender. Add chives and dill and sauté
an additional 1 to 2 minutes stir in rice and sauté until it begins to crackle. Add water and bring to boil. Reduce heat to low, cover and simmer 45
minutes remove from heat and add cheese, tossing lightly until cheese is melted.
Serve immediately.
